Heart Shaped Chicken Nuggets with Fruit Kabobs

A very easy to make meal that comes together in no time. Contains fruits and vegetables (onion), protein (chicken and cheese), and carbohydrates (cheese) for energy. The nuggets can be made ahead and frozen.

Heart-Shaped Chicken Nuggets

  • 3/4 lb chicken cutlets, cut into chunks (not cooked)
  • 1 large onion diced
  • 2 TBSP chopped fresh parsley
  • 1 small apple, peeled and grated
  • 3/4 C fresh white bread crumbs
  • 1 chicken boullion cube, crumbled
  • 1/2 C dry bread crumbs
  • 2 oz. cheese and onion flavored chips, finely crushed
  • veggie oil for frying
Put the first 6 ingredients in a food processor and chop for a few seconds until well combined. Shape mixture into a flat disk.

Use a 2 1/2 inch cookie cutter to press out heart shapes. Mix the bread crumbs and chips on a plate, and press the pieces into the coating.

Heat enough oil in a large skillet for shallow frying. Add the nuggets and cook for about 6 minutes, turning occasionally, until lightly golden and cooked through.


Easy Fruit Shish Kabobs

Ingredients:
1 banana
1 kiwi fruit, peeled and cut into chunks
handful of strawberries
small bowl of melon (e.g. watermelon, cantalope, honeydew)
4-5 oz. of cheese, cut into medium chunks
1/4 C orange juice
1/4 C coconut
wooden skewers

Cut the banana, and melon into large chunks. Place the fruit and cheese onto the skewers in whatever order you wish. Dip in orange juice then roll in coconut.

In this recipe, you can pick and choose the fruits that you desire if you don't like one or the other fruits. Can also be doubled, or tripled for the amount of kabobs you need.

I love new recipes! Especially ones my kids will eat. I love the easy fruit shish kabobs. I wish I could just eat the picture...Sugar Muffin would love these! Definitely...Thanks for sharing!

Thanks for the entry - these look great! I'm glad I'm going on vacation, as I'd be very tempted to make the nuggets before I go and that wouldn't be fair! ;-)
